Elmi won $125,000 and a spread in Food and Wine magazine.
The Insider caught up with him a little while after the show aired and has a great interview with him, in which Elmi says now he’s setting his sights on four bells from Craig Laban, who is reviewing Laurel on Sunday.
Elmi also explains to the Insider why he chose to open a 22-seat BYOB instead of an 80-seat restaurant with a bar, like the other Philly Top Chef winner, Kevin Sbraga, who opened his namesake at Broad and Pine:
He said he and his business partner, Philadelphia lawyer Jonathan Cohen, decided that smaller and more focused was the way to go. “I know exactly what I want to do,” Elmi said. “And that is focus intensively on the food and the customer.”
